			<content:encoded><![CDATA[<p>We had such a fun and relaxing weekend! It was absolutley beautiful out, so we enjoyed a few walks with Scoober and some much needed rest! It was interesting because at church we even talked about how our culture views busyness as significance. I was surprised at how much I needed to think about that. It was a great reminder that rest is not meaningless but is valued by God and should be valued by us as well.<br />
I also wanted to share this blog from a wonderfully crock pot-obsessed lady! It&#8217;s awesome! My sister sent me the link after seeing her on Good Morning America talking about cooking everything in her crock pot for a year. Kind of fascinating! We made the Asian Peanut Butter Pork and devoured it tonight! SO GOOD! I could get used to the crock pot cookin&#8217;! We&#8217;re even looking forward to leftovers! mmm!</p>

Oh! While I&#8217;m at it, one more random thing: The New York Times reported that Sleepless in Seattle&#8217;s Broadway debut is in the works! I&#8217;m very excited and curious, especially after my  Legally Blonde experience! That&#8217;s all for now&#8230;back to some snacking on some milk chocolate chips! A gourmet dessert indeed!</p>

was eaten up, if you will, by food, we became chefs. I&#8217;m not sure we<br />
can actually be called chefs, but we do have fun cooking together. By<br />
far my favorite recipes have been ones that come backed by a<br />
recommendation from friends, so I thought I should share one that we<br />
absolutely loved.</p>
<p>The other night we tried one of my sister&#8217;s<br />
(Katie) favorite recipes and loved it! It&#8217;s a crock pot meal, which<br />
means we were delighted by the smell of a ready-to-eat dinner when we<br />
walked in the door. I must warn you not to judge this book by its&#8217;<br />
cover though. Apparently, when Katie made this for my parents, my dad&#8217;s<br />
compliment was, &#8220;Well, good thing it tasted a whole lot better than it<br />
looked!&#8221; I&#8217;ll leave you with that -and the recipe!</p>

<p>Chicken Cacciatore</p>
<p>3 chicken breasts<br />
1 large onion sliced<br />
1 large bell pepper sliced (we liked yellow for the sweet taste)<br />
1 small can sliced mushrooms, drained<br />
1 can diced tomatoes with Italian seasoning, undrained<br />
15 oz. tomato sauce<br />
Salt &amp; pepper, Oregano &amp; Basil to taste</p>
<p>Put all ingredients in crock pot &amp; cook on high for 6 hrs or low for 12. Serve over pasta.</p>
