So, about the time Nick and I realized what a huge chunk of our income
was eaten up, if you will, by food, we became chefs. I’m not sure we
can actually be called chefs, but we do have fun cooking together. By
far my favorite recipes have been ones that come backed by a
recommendation from friends, so I thought I should share one that we
absolutely loved.

The other night we tried one of my sister’s
(Katie) favorite recipes and loved it! It’s a crock pot meal, which
means we were delighted by the smell of a ready-to-eat dinner when we
walked in the door. I must warn you not to judge this book by its’
cover though. Apparently, when Katie made this for my parents, my dad’s
compliment was, “Well, good thing it tasted a whole lot better than it
looked!” I’ll leave you with that -and the recipe!

Chicken Cacciatore

3 chicken breasts
1 large onion sliced
1 large bell pepper sliced (we liked yellow for the sweet taste)
1 small can sliced mushrooms, drained
1 can diced tomatoes with Italian seasoning, undrained
15 oz. tomato sauce
Salt & pepper, Oregano & Basil to taste

Put all ingredients in crock pot & cook on high for 6 hrs or low for 12. Serve over pasta.
